With back to school upon us I thought it would be fun to show you a cool idea to make your kids feel special. I call this the Back to School Breakfast because it takes some of our favorite breakfast foods and turns into a cute little treat for your kids. Watch the video to see how to make it! ~Rachel

Owl Waffle Pancakes

For waffles
  1. 2 cups pancake mix
  2. 1 1/2 cups cold water
  3. 2 tablespoons oil
For pancakes
  1. 2 cups pancake mix
  2. 1 1/2 cup cold water
  3. whipped cream
  4. blueberries
  5. orange slices
Instructions
  1. Mix the waffle batter until smooth. Grease a round waffle maker and heat it up. Scoop out the waffle batter into the hot waffle iron and cook until golden brown. Continue until all the waffles are cooked.
  2. Mix the pancake batter in a separate bowl. Heat a griddle or skillet over medium-high heat. Grease it liberally and scoop out the pancakes into a silver dollar size. Cook until golden brown on both sides.
  3. To assemble the owls, lay out two pancakes on top of a waffle. Add a bit of whipped cream to each pancake and top with a blueberry on each, for eyes. Add a triangle wedge of orange for the beak. Serve with maple syrup. Enjoy!
