College football season is underway.  NFL kicked off earlier this month.  And baseball World Series is coming up.  All this game watching requires food–  lots of food especially if all the boys are coming over.  Pizza and chicken wings are overdone.  Surprise everyone with this super easy slow cooker taco chili!

Use traditional tortilla chips, or get crazy with Fritos corn chips.  If you’re feeling fancy, a taco bowl shell would make for a delicious taco salad.   I like to pile on the shredded cheddar cheese, add a dollop of sour cream and a sprinkling of chopped green onions.  In the winter months, I think I’ll try serving this chili in a sourdough bread bowl.

I call it “taco” chili because I add a packet of taco seasoning.  The seasoning brings a familiar and comforting taste that everyone can enjoy.  Serve it buffet style where everyone can customize their own bowl.

Slow Cooker Taco Chili

Ingredients:

1- 15 oz canned black beans, drained and rinsed

1- 15 oz can tomato sauce

1- 14.5 oz can diced tomato, with juice

1 Tbsp brown sugar, packed

1 medium onion, minced

1- 1.25 oz packet taco seasoning

2 Tbsp tomato paste

2 Tbsp olive oil

2 tsp garlic powder

1 slice sandwich bread, torn

2 Tbsp whole milk

1 pound 85% lean ground beef

1/2 tsp ground black pepper

kosher salt and black pepper, as needed to season

Instructions:

1. Rinse and drain canned black beans.  Add to slow cooker, along with tomato sauce, diced tomato including juice, and brown sugar.

TheChic_ground beef taco chili2. In a medium bowl, add torn bread and milk.  Mash together with fork and then add ground beef and 1/2 tsp black pepper.  Mix together with your fingers and break into small pieces before adding to slow cooker pot.

3. In a microwave safe bowl, add diced onions, taco seasoning, tomato paste, olive oil, and garlic powder.  Stir to combine.  Microwave at one minute intervals, stirring in between each minute.  Heat for a total of 3-5 minutes until onions are softened. Add to slow cooker pot.

4.  Cover slow cooker and set to cook 3-5 hours on high heat or 6-8 hours on low heat.  Stir before serving.
