A mini bagel pizza will never not be delicious! Though I will admit to making the same recipe every single time the boys and I whip them up. Pizza sauce, mozzarella, pepperoni and done. That’s why I love Jonathan’s take on mini bagel pizzas because he’s so creative with the ingredients. I say we all throw a pizza party and encourage the kiddos to come up with their own creation!

Start by splitting open the mini bagels and arranging them in a single layer on a baking sheet or pizza pan.

The first mini bagel pizza is a Vegetarian Pesto Pizza Bagel. Spread a few bagel halves with store-bought pesto and top with shredded mozzarella and sliced cherry tomatoes. 

The second is a regular Pepperoni Pizza Bagel. Spread store-bought pizza sauce onto a few bagel halves and top with shredded mozzarella, mini pepperoni and black olives if you wish.

The third and final mini bagel pizza is a BBQ Chicken Pizza Bagel. Spread store-bought bbq sauce onto the remaining halves and top with a cheddar jack cheese blend. Cooked leftover chicken (or store-bought rotisserie chicken) red onion, and scallions.

Bake the bagels in a preheated 350ºF oven until golden brown and the cheese has melted, about 10 to 15 minutes.

Allow the mini bagel pizzas to cool before serving… they’re pretty hot when they come out of the oven!

Ingredients
  1. 9 mini pizza bagels
For the pepperoni
  1. 1/2 cup store-bought pizza sauce
  2. 1 cup shredded mozzarella cheese
  3. 1/2 cup mini pepperoni
  4. 1/4 cup sliced black olives drained
For the Pesto Vegetable
  1. 1/2 cup store-bought pesto
  2. 1 cup shredded mozzarella cheese
  3. 1/2 cup sliced cherry tomatoes
For the BBQ Chicken
  1. 1/2 cup store-bought BBQ sauce
  2. 1 cup shredded Cheddar Jack cheese
  3. 1/4 cup cooked diced chicken
  4. 1/4 cup diced red onion
  5. 1/4 cup sliced scallions
Instructions
  1. Preheat oven to 350 degrees F.
  2. Split all of the mini bagels and arrange them on a baking sheet in a single layer.
  3. To make the pepperoni, spread 6 halves with pizza sauce and top with mozzarella. Arrange about 3 pepperoni on top of each and add a few olive slices.
  4. To make the pesto vegetable, spread 6 halves with pesto sauce and top with mozzarella. Arrange a few sliced cherry tomatoes onto each.
  5. To make the BBQ chicken, spread the remaining with bbq sauce and top with Cheddar Jack. Top with chicken, red onion and scallions.
  6. Bake until golden brown and bubbly, about 10 to 15 minutes. Serve warm.
