We’re kicking things up a notch with these Turkey Lettuce Cups and proving that easy take out at home is totally doable! Start by browning the ground turkey. Which, just to let you know, you can definitely use ground chicken or beef instead if you prefer!

Add the remaining vegetables to the skillet, carrots, celery, orange bell pepper, and savoy cabbage. Cook until tender.

We’re going to make a simple sauce with hoisin (which is an Asian sweet plum sauce), soy sauce and sriracha or any other hot sauce you have on hand. The heat will cut the sweetness from the hoisin and balance it out nicely.

Serve the filling with lettuce cups for a quick and healthy dinner! I like to top it with sliced scallions and crunchy chowmein noodles (which you can find in the Asian aisle at the grocery store).

Ingredients
  1. 1 tablespoon olive oil
  2. 2 pounds ground turkey
  3. 1 red onion, diced
  4. 3 garlic cloves, minced
  5. 1/2 cup scallions, sliced
  6. 2 medium carrots, diced
  7. 2 large celery stalks, diced
  8. 1 orange or yellow bell pepper, diced
  9. 1 cup savoy cabbage, shredded
  10. 1 teaspoon salt
  11. 1 teaspoon black pepper
  12. 1/4 cup hoisin sauce
  13. 2 tablespoons soy sauce
  14. 1 to 2 teaspoons sriracha
  15. 1 large iceberg lettuce head, leaves carefully removed
Instructions
  1. Heat a large skillet over medium-high heat with 1 tablespoons oil. Add the ground turkey and cook, breaking it down with a wooden spoon, until browned and crispy. Stir in the red onion, garlic and half of the scallions. Toss and cook for about 3 minutes to soften.
  2. Add the remaining veggies and cook for another 5 minutes until tender. Mix in the hoisin, soy sauce, sriracha, salt and pepper. Cook for 1 to 2 minutes to thicken the sauce. Serve in lettuce leaves with the remaining scallions as garnish.
