Looking for a quick and fun treat to make this St. Patrick’s Day? I’ve got one just for you that I concocted out of 2 (yes you read that right) ingredients! This is a variation of  the beloved Peanut Butter Cup and can be whipped up in about 10 minutes. It’s great for those with a peanut allergy and the vanilla candy can be substituted with chocolate of course!

What You Will Need-

1 Bag of Vanilla Flavored Melting Candies(I prefer Wilton’s version)
*I used the green candy but you can always just add green food coloring to the white candy.

1/2 Cup Chunky Almond Butter At Room Temperature

A Peanut Butter Cup Candy Mold OR Mini Muffin Tins with Mini Muffin Liners

Heat the candy ‘chips'(or chocolate if you prefer) over a low/medium heat. Take your time melting the candy so that you don’t burn it.

As soon as the candy is melted spoon enough into the molds or liners to fill 1/3 of the way. You need to leave enough room for the Almond Butter and another layer of candy.

Next, spoon about 1 Teaspoon of room temperature Almond Butter on top of the melted candy that’s in the mold.

top it off

Spoon one more dollop of melted candy on top of that and gently smooth out until it covers the majority of the Almond Butter. Don’t worry if it doesn’t look like a machine made them! As you can see, mine have a little butter peeking out and I think it’s a nice homemade looking touch.

Place them in the fridge or freezer until they harden and then share or enjoy all to yourself!
