If you’re looking for a great refreshing cocktail to share with your friends look no further than this cucumber kiwi mojito! The flavors are crisp and delicious and since you’re make it all in one big pitcher it’s just begging for a happy hour to attend with you. Make it a couple of days in advance and really let all the fruity flavors mix and mingle.

Start by blending the fresh cucumber and kiwi in a blender until smooth.

Strain the juice into a pitcher through a fine-mesh strainer to remove the pulp. To the pitcher, add the agave syrup, orange liqueur, fresh lemon juice and a bottle of white wine. Try using either Chardonnay or Sauvignon Blanc.

Stir in the fresh apple slices, cucumber slices and kiwi. This will add more flavor and give it more of that green color we’re looking for.

Cover with plastic wrap and place in the fridge for at least 1 hour. This will allow the flavors to meld and do their thing. Over night would be even better, so make it the night before and let it rest in the fridge.

Fill the glasses with ice and pour in the cucumber kiwi sangria. Garnish with more fresh kiwi and/or cucumber slices.

Top off each glass with a slash of club soda to add a bit of fizz to the cocktails.

Ingredients
  1. 2 medium cucumbers, washed
  2. 4 to 6 kiwi fruit, peeled
  3. 1/4 cup agave or simple syrup
  4. 4 ounces orange liqueur
  5. 2 lemons, juiced
  6. 1 bottle white wine
  7. 2 green apples, cored and diced
  8. club soda for topping glasses
  9. ice
Instructions
  1. In a blender, combine 1 cucumber (diced) and 2 kiwis, and blend until smooth. Pour into a large pitcher through a fine-mesh sieve to remove the pulp. Stir in the agave syrup, orange liqueur, lemon juice and entire wine bottle. Stir in the remaining cucumber (sliced), kiwi (sliced) and apples. Cover with plastic wrap and place in fridge for 1 hour to chill. Serve with ice and fruit for garnish. Top off each glass with a splash of club soda.
