ingredients for pizza pasta bake rotisserie chicken recipes

Start by pulling all the meat off the chicken… I suppose you could roast this chicken yourself but I just used a rotisserie from the store! Now you’ll need to boil your pasta to al dente (that means just a little bit tough) then drain and set to the side. Since you’ll be mixing it with sauce and baking it you don’t want it to be too soggy.

Now, for the most important part of the BBQ Pizza Pasta Bake… the sauce! Add in your ricotta, and your barbecue sauce!

  1. 1 pound pasta (short cut noodle)
  2. 4 baked chicken breasts (from the grocery store)
  3. 1 cup ricotta cheese
  4. 1 cup BBQ sauce
  5. 1 small red onion, diced
  6. 1/2 teaspoon salt
  7. 1/2 teaspoon black pepepr
  8. 1 cup mozzarella cheese, shredded
  9. 1/4 cup scallions, sliced
  1. Preheat oven to 375 degrees F.
  2. Bring a large pot of cold water to a boil, season liberally with salt and drop in the pasta. Cook until almost done, not all the way, since it's going to continue to cook in the oven. Drain and return to pot.
  3. Combine the pasta with the ricotta, BBQ sauce, red onion, salt, pepper, and half of the mozzarella. Transfer to a 9x13 inch baking dish and top with the remaining cheese and bake for about 20 to 25 minutes or until bubbly and golden brown. Top with scallions and serve immediately.

This looks so amazing! I have a question, though, since I know less-than-nothing about cooking (don’t laugh!). I know that my son and his roommates up at UC Santa Barbara would LOVE this. How can I make it so they can eat it at a later date? I need to freeze it, somehow.
    Thanks, Beth

I would NEVER laugh Beth! The only way we learn to cook is by trying… and by asking questions. I’m not totally sure how to freeze this but if I was going to try I would make it but not bake it. I’d freeze it the step before baking. Then tell the boys to unfreeze and bake through. I think it’ll work but I’ve never actually tried it. If you do, let me know how it goes! xo

Very good & easy to make! Substituted cottage cheese for the ricotta & added green peppers & black olives!
