With the release of the new Disney Movie, Big Hero 6 fast approaching, we wanted to show our love for Disney by making these adorable Baymax cupcakes! They’re super easy to make using boxed cake mix and store bought frosting. Add a jumbo marshmallow on top painting his eyes with black food gel icing! They’re the perfect dessert for your Big Hero 6 birthday party!

Use your favorite cake box mix to make cupcakes according to the package directions. I used a red velvet flavor because red seems to be a prominent color in the logo and design of Big Hero 6. Frost each cupcake with vanilla frosting, creating a swirl for his body.

Take the jumbo marshmallows and paint Baymax’s eyes, on the rounded edge, using a black gel icing pen. I found it at the grocery store, but if you can’t find it there you can probably get it at a craft store that sells baking stuff. Or online!

Allow the eyes to dry a bit and then place the marshmallow on top of the frosted cupcake. You’ll end up with Baymax cupcakes that easily!

Make these cupcakes as a fun treat for your kids and then go out and watch the movie when it hits theaters in November! The fact that they’re super easy to make, without all of these complicated decorating steps and techniques makes it so achievable for everyone!

Ingredients
  1. 1 red velvet cake box mix (or your favorite flavor)
  2. 1 tub vanilla frosting
  3. 12 jumbo marshmallows
  4. black gel icing
Instructions
  1. Preheat oven to 350 degrees F. Mix and bake the cupcakes according to the package directions. Allow to cool completely.
  2. Frost the cupcakes with the vanilla frosting, using a piping bag, food storage bag, or an off set spatula or knife.
  3. Paint Baymax's eyes using the black gel icing, onto one side of each jumbo marshmallow. Allow to dry and set for a few minutes. Top each cupcake with the marshmallow and you're done! Enjoy!

    Too cute my daughter is obsessed with Disney and can’t wait to see the movie she will get a kick out of these, let me add she’s almost 15! Never too old for Disney!

    I attempted to make these last night and though it is super easy…. I managed to completely fail by first off… sending the HUSBAND to the store for the things I needed….. jumbo marshmallows? nope, he brought the minis…..black icing? nope….. black sprinkles….I couldn’t find my cupcake tray…. so used a pan and circled them around in hopes they would keep some sort of round shape….didnt happen, but at least they baked and didn’t fall over….ran out of ziplock bags to put the icing in to frost cupcakes neatly….. used a spoon and didnt go very well…. pilled on a dollop of frosting to substitute for the jumbo marshmallows since husband failed me…. cut the minis and used chocolate frosting as “glue” to hold the black sprinkles…. i only made this one and I was over it lol! it was late and I was sleepy. We get to go to the premiere today at our local theatre and thought we could pre-celebrate with cupcakes….. well one cupcake will do lol! Does not help that the day before, I attempted white chocolate covered apples to make baymax apples…. I failed at that too… and all I had to do was cover an apple in chocolate…. yet I made more mess than my dogs make with a stuffed toy….I’m sticking to photography from now on lol!!!!!!

    Thanks for the great idea. My wife and I recently threw a Big Hero 6 Birthday party for my 5 year old son. We made these amazing cupcakes and used a great birthday banner, and centrepiece from Etsy. https://www.etsy.com/ca/shop/InstantBirthday The Birthday Banner was great in particular because it had every letter of the alphabet so we could print out “Happy Birthday Liam”. The cupcakes that went with it were a hit and made for a super awesome memorable day! Thanks again.

    my bay max eyes were to big and runny so I took a small nail to pierce the black gel tube and that seemed to work better for a fine line. So cute!!!
