Spinach, Pear and Feta Quesadillas

If you’re trying to find new and exciting ways to get your kids to eat more fruits and vegetables (like spinach and pears, for instance) I find that the best way to do this is by stuffing them into a cheesy quesadilla. Fool them by masking the fruits and veggies with lots of melted cheese and a wholesome flour tortilla! They’re the perfect after school snack!

Before proceeding to making the actual quesadillas themselves, just sauté a bag of fresh baby spinach in a skillet, over medium-high heat with a drizzle of olive oil. Cook until completely wilted. Pour into a colander and allow the spinach to drain. 

Heat a large skillet (large enough to fit a big flour tortilla) over medium heat. Warm the tortillas on both sides for a few seconds to make them soft and easier to fold. 

Sprinkle with monterey jack, feta, pear slices and spinach on one side of the tortilla. Season with a bit of freshly cracked black pepper.

Fold over and return to the skillet and cook on both sides until lightly browned and the cheese has melted thoroughly. 

Continue these steps until all the quesadillas are cooked. Cut into wedges and serve!

They’re also great for parties, make a bunch in advance and then serve them cold or at room temperature. Or make them, store in the fridge and rewarm in the oven before your guests arrive!

Ingredients
  1. 4 large flour tortillas
  2. 1 bag fresh baby spinach
  3. 1 1/2 cups shredded monterey jack cheese
  4. 1/2 cup feta cheese crumbles
  5. 2 small pears, sliced
  6. black pepper
Instructions
  1. Heat a skillet over medium-high heat, add a drizzle of olive oil and throw in the baby spinach leaves. You might have to add in a little at a time as the spinach cooks down. Sauté until the spinach has completely wilted. Transfer to a colander and allow to drain and cool down completely.
  2. Heat a large skillet over medium heat and warm the tortillas on each side for a few seconds to make them easier to work with. Working with one at a time, sprinkle with a bit of the monterey jack cheese, feta, spinach, pear slices, and black pepper, on half of the tortilla. Then fold over and repeat with the remaining ingredients.
  3. Cook the quesadillas in the hot skillet allowing both sides to brown slightly and the cheese to melt. Cut into wedges and serve right away. Enjoy!
