With Mother’s Day just around the corner I wanted to throw a recipe to all the dads out there who don’t speak “kitchen” as well as others. I figured this was the way to go because it involves minimal amount of cooking, with lots of help from the store. So let’s get out there and do something special for the moms in our lives. Breakfast kabobs are a start. 

We’re going to be talking about two different types of breakfast kabobs. The first one is The Savory Kabob, my personal favorite because you get the best of both worlds, sweet and savory. Not to mention it tastes just like a pig in a blanket.

Now dads, don’t go through all of the hassle of making your own pancake batter…use instant pancake mix instead! Throw it into a bowl, add water and whisk. You’re good to go. Make mini pancakes (about the size of a silver dollar).

Shape the turkey sausage into the same size and cook until brown and crispy on both sides.

Skewer the bite sized pancakes and sausage patties, alternating between the two. Serve it alongside a bowl of maple syrup for dunking.

Let’s now focus on The Sweet Kabob. This one is really simple and my personal favorite because you don’t have to cook anything. It’s a great way to get your kids to eat more fruit, and some grown ups like me who don’t like eating healthy. Shhh don’t tell my mom.

Take some major help from the store for this one. Toast a few frozen waffles and cut them into squares. Then trim a bunch of strawberries and cut up a few bananas. Skewer the waffles and fruit, alternating between the three. Don’t forget the maple syrup!

Feel free to swap out the fruit for your favorite, or mix and match the waffles with the sausage or the pancakes with the fruit. These are so easy to make that you can whip up a variety for moms to choose from. Happy Mother’s Day!

Ingredients
  1. 6 frozen waffles
  2. 1 tablespoon olive oil
  3. 1 pound breakfast turkey sausage
  4. 2 tablespoons butter
  5. 2 cups pancake batter
  6. 1 pint fresh strawberries, rinsed and trimmed
  7. 2 bananas, peeled and cut into large rounds
  8. maple syrup for drizzling or dunking
Instructions
  1. For savory kabobs: Heat a large skillet over medium heat. Drizzle in the olive oil. Shape the turkey sausage into small rounds (about the size of a silver dollar) and cook until browned and crispy on both sides and cooked through, about 4 to 6 minutes. Transfer to a plate.
  2. Heat another skillet over medium heat. Add butter and allow to melt. Make the pancakes the same size as the sausage. Cook for 1 to 2 minutes per side, only flipping once. Transfer to a plate.
  3. Skewer the pancakes and sausage onto a kabob skewer, alternating between the two. Serve with maple syrup. Enjoy!
  4. For sweet kabobs: Toast the frozen waffles until golden brown, and cut into small squares. Skewer the waffles, strawberries and bananas onto a kabob skewer, alternating between the three ingredients. Serve with maple syrup. Enjoy!
Notes
  1. Great tip: Try swapping out the ingredients with some of your favorite breakfast flavors, to make different types of kabobs!
