Rocky Road Cookies

It’s a Rocky Road

Rocky Road is my favorite ice cream flavor.

But when it comes to “the road”  you either love it, or hate it with a passion. Dave thinks it’s straight from the devil. He hates everything about it and silently judges me every time I order it as my scoop choice. I guess that means he wont like my Rocky Road Cookies… but never mind him, you’ll love them!


Here’s What You’ll Need

1 Box of Devil’s Food Cake Mix – that’s right, CAKE mix!

3/4 Cup of Vegetable Oil

2 Eggs

Mini Marshmallows

Roasted, Salted Almonds – Chopped

Mix It Up

Preheat oven to 350. Next combine oil, egg and cake mix with an electric mixer… sure, I guess you could whisk by hand but this is really thick and you might get carpal tunnel. I’d just go ahead and use electric.

Chopped Almonds

Next, use a knife to roughly chop up your almonds.

A Little of This…

All Mixed Up

Next use a small ice cream scoop, or a small spoon to place cookies on a greased cookie sheet.

Marshmallow Me!

Once you’ve put your cookies on the sheet firmly press little marshmallows into the top of each cookie dough mound. Make sure you press them in well or they’ll slide off as they start to toast in the oven. Put into the oven and bake for about 10 minutes.

Just Out of the Oven

Remove baked cookies from oven and place on wire racks or plate to cool… remember, if you leave the cookies on the sheet they’ll continue to cook because the sheet is still hot.
