I was put in charge of fruit salad for this year’s family 4th of July barbecue… I think my mother in law was trying to give me something relatively easy since I’m currently the size of a single family home and can’t be on my feet for too long. Rather than go with the typical mix of this and that I decided to theme my salad to go along with the holiday… the result is sweet and crunchy and has a little tang, and is all around adorable. Maybe consider adding it to your menu for the firework show.
Here’s What You’ll Need
2 Cups of Fresh Strawberries – Washed and Quartered
1 Small Package of Fresh Blueberries – Washed
10 Mint Leaves – Finely Chopped
1/2 Lemon – Juice… I love the tang of lemon and jicama but if you’d prefer something a little sweeter you can do the juice of half an orange instead
Tool – small star cookie cutter
Start by cutting your jicama into 1″ slices so you can easily use your cookie cutter to get the shape you want. If you don’t a small star cutter, you can just cut your jicama into 2″ cubes and have a red, white and blue salad.
Once you’ve cut out as many jicama stars as possible set to the side and prep the rest of the salad.
Add blueberries to a large mixing bowl
Add strawberries and mint to the blueberries
Next add your citrus juice and stir together
You might consider keeping your stars separate from the salad until just before serving… jicama is porous so it will absorb the the strawberry juice and turn a little pink. If you care about a true red, white and blue theme then add the stars at the last minute.
You can serve in a large bowl or in individual ramekins for fun. Happy 4th Everyone!!
